Seville Estate’s Estate Range showcases wines grown exclusively on the property, produced on site to reflect the character of their cool-climate Upper Yarra vineyard. Surrounded by native bushland and rooted in mineral-rich red volcanic soils, these wines capture a clear expression of place, vintage, and varietal identity.

Region & Vintage Conditions

Cool-climate conditions allowed the fruit to ripen slowly, supporting bright acidity and detailed flavour development. The season enabled Pinot Noir to build both delicacy and depth, with vineyard expression shining clearly through.

Handpicked estate-grown fruit harvested at dawn, including MV6 (planted 1996) and the first inclusion of Pommard and Abel clones, chosen for their lifted aromatics and refined structure.

Winemaking

70% destemmed and 30% whole bunches, followed by a four-day cold soak. Wild fermentation with daily pump-overs, then gently pressed to 300L and 500L French oak (30% new). Naturally clarified and bottled unfined and unfiltered to retain delicate varietal nuance.

Tasting Notes

Appearance: Bright, translucent red with youthful clarity.

Aroma: Delicate and lifted with red cherries, muddled raspberries, dried rose petals, potpourri, and violet.

Palate: Vibrant red-cherry acidity leading into dried cranberries, blood orange, and crushed bramble canes, all supported by soft, finely pixelated tannins.

Finish: Long, dry, and moreish, carried by persistent cherry-pip acidity.
