Vineyards and Vintage Conditions
Fruit for the 2023 Sauvignon Blanc was sourced from Griffin Road and Wallace Lane vineyards, planted at around 750–850 metres altitude on basalt soils. The season offered mild, cool ripening conditions that preserved acidity while allowing aromatic intensity to emerge.
Winemaking Process
Approximately one-third of the wine was fermented in older French oak barrels for ten months with extended lees contact and stirring. The remainder fermented in stainless steel. This blend of methods results in intensity and finesse with a softly textured palate.
Tasting Notes
Pale straw in appearance. The nose shows passionfruit, green papaya, nettles and tropical fruits. The palate is refined and pillowy, tropical fruit flavours balanced by crisp acidity and soft, elegant texture, leading to a clean, persistent finish.
Food Pairing
Pairs beautifully with oysters and clams, sushi, seafood salads, or goat’s cheese. It also complements herb-laced vegetarian dishes or lighter poultry fare.
