Ross Hill Wines is a family-owned estate in the Orange region of New South Wales, led by the Robson family. The Pinnacle Series showcases the finest vineyard parcels, and this Cabernet Sauvignon is sourced exclusively from âThe Ridgeâ at Griffin Roadâheld in high regard for its concentrated, cool-climate Cabernet fruit.Â
Vineyards and Vintage Conditions
The fruit for the 2022 Cabernet Sauvignon comes from low-yielding vines planted on basalt soils at approx. 750â1,020âŻmetres elevation. The seasonâs combination of cool nights and moderate daytime warmth helped retain acidity while producing deeply flavoured, aromatic fruit.Â
Winemaking Process
Hand-harvested grapes were naturally fermented with wild yeasts in small open fermenters. The wine matured for 18âŻmonths in French barriques and hogsheads (with around 52% new oak), and was bottled under screwcap to preserve freshness and structure.
Tasting Notes
Deep ruby-red in colour. The nose shows cassis, cedar spice, red cherry and anise. The palate features dense blue fruit layered with fine tannins, savoury structure and cedar-inflected spice, finishing with length and aromatic lift.Â
Food Pairing
Sweet-spot with roast beef, grilled steak, lamb chops or mature cheddar. It also pairs well with charred root vegetables or herb-led vegetarian dishes.
