Vineyards and Vintage Conditions
The fruit for the 2022 Jack Shiraz was sourced from the Angullong vineyard at around 601āÆm elevation. The climate features cool nights and moderate warmth during the day, which helps preserve bright acidity while developing ripe red fruits and seasonal complexity.
Winemaking Process
Approximately 5āÆ% whole-bunch inclusion and 75āÆ% whole berries were used during fermentation to gain textural nuance. Around 10āÆ% of the wine was matured in new French oak, with the remainder aged in neutral oak, all for roughly 12 months. Bottled under screwcap to retain freshness.
Tasting Notes
Deep crimson red in colour, the wine opens with aromas of red cherries, plum, white pepper and clove. The palate is medium-bodied and savoury, featuring cherry and plum flavours, light oak spice, gentle earth notes and fine tannins balanced by crisp acidity.
Food Pairing
Pairs seamlessly with roast pork, meat casseroles, grilled sausages or mature cheddar cheese. Its red-fruit freshness and moderate structure also stand up well to herby root vegetables.
