TASTING NOTE:
Pale straw with gold tints. Aromas of nashi pear and grapefruit pith with underlying hints of white flowers. The palate shows flavours of white-fleshed nectarine and feijoa, underpinned by a fine seam of talc texture. The smooth mouthfeel is complemented by a grapefruit freshness on the finish. Serve with chargrilled calamari and aioli mayo. The grapes are harvested during the cool of the night and pressed immediately to maximise fruit freshness and aromatics. Cool fermentation helps to enhance varietal character, with a small portion of the juice allowed to ferment with wild yeast to add extra complexity and texture. The final blend then spent seven months on full yeast lees in older French oak barriques with regular batonnage to enhance the texture.
