Vineyards and Vintage Conditions
The vineyards sit on north-facing slopes of Bendigo, where free-draining soils, cold nights, and warm, sunny days create the perfect conditions for growing premium Pinot Noir and Chardonnay. These conditions deliver fruit of exceptional concentration and freshness, perfectly suited for méthode traditionnelle sparkling wines.
Winemaking Process
Crafted in the traditional Champagne style, this sparkling Rosé is made primarily from Pinot Noir, with a small portion of Chardonnay for balance. After gentle pressing, the wine undergoes secondary fermentation in bottle and is aged on lees to build creamy texture and depth. Disgorgement is carried out with precision to maintain freshness and finesse.
Tasting Notes
A delicate salmon-pink hue. Aromas of wild strawberries, redcurrants, and rose petals are beautifully complemented by notes of brioche and subtle spice. The palate is vibrant and refined, showcasing crisp red berry fruit, fine bubbles, and a creamy, lingering finish with elegance and poise.
