Nomad’s Gardens is a family-run venture based in Eldorado in North East Victoria, established in 2017 by Ben Schulz Dahlenburg and Ellie Schulz Dahlenburg. They specialise in single-vineyard, low-intervention wines made with wild yeasts and minimal additives. Their fruit is sourced from diverse sites across North East Victoria, including the warm flats of Rutherglen and the cooler sites of King Valley and Beechworth.

The 2023 season in Victoria’s high-altitude sites was cool and steady, ideal for aromatic varieties picked early. These conditions gave this Pet Nat bright natural acidity, subtle complexity and a clean ferment driven by healthy fruit.

This wine is sourced solely from the Baxendale Vineyard, a cool and elevated site known for precision, freshness and high natural acidity, traits that suit Pet Nat perfectly.

Winemaking

Picked early and handled lightly. The wine completed its primary fermentation in bottle, building natural fizz with a cloudy, textural edge. No heavy intervention, no additions beyond the essentials, allowing the vineyard to speak.
