Winery Background

Moppity Vineyards was established in 2002 by Jason and Alecia Brown in the high‑altitude Hilltops region of Southern NSW. The Block series celebrates single vineyard sites, and Block M1 is dedicated to Cabernet Sauvignon grown on one of the estate’s standout parcels in Hilltops, renowned for producing expressive, site-driven wines.

Vineyards and Vintage Conditions

Fruit for the 2022 Cabernet Sauvignon Block M1 was sourced from elevated vines in cool-climate Hilltops. The growing season delivered the ideal mix of warm daytime temperatures and cool nights, resulting in richly concentrated black fruit alongside natural herbaceous freshness.

Winemaking Process

Hand-harvested fruit was fermented parcel by parcel. Gentle extraction preserved varietal purity while ageing in carefully selected oak added depth and refined structure. The wine was bottled under screwcap to maintain freshness and clarity.

Tasting Notes

This Cabernet Sauvignon opens with generous aromas of blackberry, dark chocolate and black olive, followed by lifted notes of herb and complexity. Bright and layered fruit unfolds on the palate, supported by fine supple tannins and a seamless structure. The finish is rich, savoury and utterly refined.

Food Pairing

Pairs beautifully with chargrilled lamb or beef, roast poultry with herb rubs and richly sauced vegetarian dishes. It also works well with aged cheddar or mushroom-based meals.
