Background
Hollick Estates is a boutique vineyard-based producer in Coonawarra, known for some of the regionās esteemed vineyards: Neilsonās Block, Wilgha, and Red Ridge. The Wilgha Shiraz comes from the Wilgha vineyard, established in 1987, which is one of Hollickās core vineyard sites.
Vineyards & Vintage Conditions
The 2019 vintage in Coonawarra delivered warmth and ample sunlight with cool nights, granting fruit good maturity while preserving acidity. The vines used are from the Wilgha block, which includes some of Hollickās older plantings. These vines are planted on shallow terra rossa soil over limestone, typical of the region, helping produce concentrated fruit with structural backbone.
Winemaking
Select parcels of Shiraz from Wilgha were carefully harvested, with strict selection of best bunches. Fermentation was managed to extract rich colour and flavour, balanced by attention to avoiding harsh tannins. The wine was matured in oak ā Woodlistaustralia notes it spends āa year and a half in oak.ā Oak integration is remarked upon for showing spice, vanilla and nutmeg in the aroma profile.

Appearance: Vibrant red-purple hue.

Aroma: Aromas of blackberry, mulberry and dark fruits, layered with vanilla, nutmeg and well-integrated oak.

Palate: Dense, lush dark fruit core with seamless texture. Silky tannins, with spice and oak influence giving depth.

Finish: Excellent length, balancing fruit power with oak spice and fine tannins. Designed to age further but drinking well now.
Food Pairing
Pairs beautifully with roast lamb or beef, game meat, rich mushroom dishes or hearty stews. Also excellent with aged cheeses. Best served at ~18°C, and decanting recommended if drinking now to open up aromas.
