Hollick’s The Nectar is a dessert-style wine from Coonawarra. It is crafted using botrytised fruit (i.e. grapes affected by noble rot) to produce a rich, sweet expression with concentrated flavours and balanced freshness. Hollick markets The Nectar as part of their dessert wine portfolio.

Vineyards & Style

The grapes are sourced from estate vineyards, including Wilgha, growing Riesling and Semillon varieties. The natural onset of botrytis in favourable vintage conditions dehydrates the berries and concentrates sugars, resulting in a wine with luscious richness yet retaining aromatic lift.

Winemaking

The grapes are hand selected when botrytis is suitably developed, gently pressed, and fermented slowly (often under cool conditions) to retain aromas and balance sweetness. The wine is then clarified, stabilised and bottled in smaller 375 ml units to suit dessert wine serving.

Tasting Notes

  • Appearance: Bright pale gold

  • Aroma: Lemon, apricot, marmalade, honeyed notes and spice.

  • Palate: Sweet and creamy with rich citrus, stone fruit (apricot), lime marmalade and lingering honeyed character.

  • Finish: Soft acid balance ensures the sweetness does not dominate, the finish remains elegant rather than cloying.

Food Pairing

Pairs beautifully with citrus-based desserts (lemon tart, creme brûlée), almond biscotti, blue cheese, or even foie gras. It’s also excellent on its own as a dessert sipper.
