Hollick Estates is a boutique winery on the famous terra rossa soils of Coonawarra, in South Australia. Established by Ian & Wendy Hollick in the mid-1970s, the estate has grown through key vineyards including ā€œNeilson’s Block,ā€ ā€œWilgha,ā€ and ā€œRed Ridge.ā€ Their approach is hands-on and estate-grown: Hollick is known for crafting wines that clearly reflect the vineyard, soil and climate of Coonawarra, especially their white varieties such as Sauvignon Blanc and Chardonnay.

Vineyards and Vintage Conditions

Sauvignon Blanc for The Bard is grown in Hollick’s estate vineyards with cool nights and warm days typical of Coonawarra, helping preserve natural acidity and varietal freshness. The 2024 vintage enjoyed favourable conditions, giving the grapes time to ripen with clarity of flavour and aromatics. The cooling effect from morning mist and the soil profile (terra rossa over limestone) contribute to the wine’s crispness and finesse.

Winemaking

Grapes were harvested early to mid-morning to retain aromatics and cool temperature, then gently pressed. Fermentation occurred in stainless steel to capture the primary fruit and freshness, with very little or no oak used, in order to preserve the crisp Sauvignon Blanc character. Minimal intervention ensures the final wine expresses fruit and place rather than heavy winemaking influence. (Inferred from Hollick’s white wine style & practice as listed).

Tasting Notes

  • Appearance: Pale water-white with a faint green tinge around the rim.

  • Aroma: Lifted scents of green apple, passionfruit, lime zest with underlying herbaceous and mineral nuances.

  • Finish: Dry, clean and mineral-leaning, with lingering citrus and a touch of grassiness.
