The Bard range celebrates the poetic legacy of John Shaw Neilson, and this Cabernet Sauvignon is crafted to express the signature style of Coonawarra — rich fruit, balanced structure, and that distinctive ā€œterra rossa over limestoneā€ soil character.

Region & Vintage Conditions

The 2021 vintage in Coonawarra offered warm days and cool nights, helping grapes ripen fully while retaining freshness and crisp varietal integrity. Estate-grown vines benefitted from ideal climate conditions, with sufficient diurnal range (diurnal = day versus night temperature difference) helping aromatics to hold and tannins to develop in harmony.

Winemaking

Carefully harvested, the Cabernet grapes were handled with care to preserve fruit purity. Fermentation was temperature-controlled, with attention to extracting flavour and structure without harshness or excess oak. The wine was matured in oak (likely a combination of seasoned French barrels and possibly some older barrels) to lend complexity, texture and a frame for the dark fruit without overwhelming it.

Tasting Notes

  • Appearance: Deep ruby red with youthful garnet edges.

  • Aroma: Rich dark fruits - blackcurrant, plum, cassis - mingled with hints of mint, cedar and subtle herbal notes.

  • Palate: Medium-full bodied; plush black fruit core, firm yet refined tannins, flavours of dark berry and cedar spice.

  • Finish: Long and satisfying, with lingering dark fruit, minty lift and soft oak undertones.

Food Pairing

Pairs beautifully with roast lamb, beef short ribs, aged cheddar or dishes with rich sauces. Decanting for 30-60 minutes helps open up the wine and reveal more aromatic depth.
