Hollick Ravenswood Coonawarra Cabernet Sauvignon 2021 - 6 Bottles
Winery Background
Ravenswood is one of Hollickās flagship Cabernet Sauvignon lines, drawing from their most prized blocks, including Neilsonās Block and Wilgha. These are estate-grown vines planted on shallow terra rossa over limestone soils, the classic foundation for some of Coonawarraās most refined and long-lasting Reds. The āLaneā in its name refers to the link between these vineyards.
Vintage Conditions & Vineyard
The 2021 vintage in Coonawarra is widely praised as an excellent year: warm, steady ripening periods but with cooling nights that preserved crisp acidity. Fruit used in this wine comes from Hollickās oldest vine parcels, harvested carefully to ensure balanced ripeness and tannin maturity.
Winemaking
After harvest, the best parcels are selected and fermented, then matured for about 18 months in French oak barrels to bring structure and oak integration without overwhelming the vibrant fruit. The oak is noticeable but in the process of blending harmoniously with the core of the wine.
Tasting Notes
-
Appearance: Deep inky maroon with dark ruby edges.
-
Aroma: Rich aromas of blackberry, blackcurrant and dark plum, layered with chocolate, mint, tobacco leaves, aniseed and a dusting of cocoa. Thereās also a hint of vanilla and cedar from oak.
-
Palate: Full-bodied and structured, delivering sleek tannins, focused acidity and concentrated dark fruit flavoursāblackberry, cassisābalanced by oak-derived spice and subtle herbal notes. The wine is linear in its build, showing strong backbone and length.
-
Finish: Long, lingering; the fruit and oak spices persist with a refined and firm tannin grip. With proper cellaring, it should continue to evolve for 12-15+ years.
Food Pairing
Pairs beautifully with robust red meats: roast lamb or beef, venison, grilled rib-eye. It also complements slow-cooked dishes with hearty sauces and aged hard cheeses. Decanting can help soften tannins and let aromas open up.
