Hollick Coonawarra Tannery Block Coonawarra Cabernet Sauvignon Merlot NV (375ml) - 12 Bottles

Background

Hollick Estates is a boutique winery located on the famed terra rossa soils of the Coonawarra region in South Australia. Founded in 1975, Hollick has built its reputation on vineyard-focused wines that reflect the unique soil, climate, and winemaking craftsmanship of this prestigious region. The Tannery Block Cabernet Merlot is part of their premium range, showcasing the best of Coonawarra's terroir.

Winemaking

Crafted from estate-grown fruit, the Cabernet Sauvignon and Merlot underwent traditional winemaking techniques to preserve their delicate aromas and flavours. The wine was fermented separately to ensure optimal extraction and then aged in French and American oak barrels for 18 months to enhance its complexity and texture.

Tasting Notes

  • Appearance: Deep crimson with a bright clarity.

  • Aroma: Rich berry and cassis aromas.

  • Palate: Flavours of dark cherry, blackberry, and subtle oak spice.

  • Finish: Soft tannins with a lingering finish.

Food Pairing

Pairs beautifully with slow-roast shoulder of lamb, grilled steaks, or hearty pasta dishes.
