Hollick Estates is a boutique winery located on the famed terra rossa soils of the Coonawarra region in South Australia. Founded in the 1970s, Hollick has built its reputation on vineyard‑focused wines that reflect the unique soil, climate, and winemaking craftsmanship of this prestigious region.

Vineyards & Vintage Conditions

The 2019 vintage experienced cool and dry conditions, providing slow and even ripening that allowed for full flavour development and soft, ripe tannins. The shallow terra rossa soils let the vines fight to reach the nutrients they need, producing excellent fruit.

Winemaking

Crafted from estate-grown fruit, the Cabernet Sauvignon underwent traditional winemaking techniques to preserve its delicate aromas and flavours. The wine was fermented in small batches to ensure optimal extraction and then aged in French oak barrels to enhance its complexity and texture.

Tasting Notes

  • Appearance: Deep violet

  • Aroma: Fresh mint and blackberries

  • Palate: Cassis and red berries with finely grained tannins

  • Finish: Long and satisfying, with lingering dark fruit and subtle oak undertones

Food Pairing

Pairs beautifully with roast lamb, beef short ribs, aged cheddar, or dishes with rich sauces. Decanting for 30–60 minutes helps open up the wine and reveal more aromatic depth.
