Founded in the 1970s, Hollick has built its reputation on vineyard‑focused wines that reflect the unique soil, climate, and winemaking craftsmanship of this prestigious region. The Bond Road Chardonnay is part of their premium range, showcasing the best of Coonawarra's terroir.

Vineyards & Vintage Conditions

The 2024 vintage in Coonawarra experienced ideal conditions, with warm days and cool nights, allowing the Chardonnay grapes to ripen slowly and evenly. This slow ripening preserved the grapes' natural acidity and aromatic complexity, resulting in a wine with balance and elegance.

Winemaking

The Chardonnay grapes were pressed off to French oak, with 30% new oak used to impart subtle complexity without overpowering the fruit. Fermentation was carried out in oak barrels, with 50% wild yeast and 50% selected yeast, followed by 8 months on lees with regular stirring and partial malolactic fermentation. This traditional winemaking approach enhances the wine's texture and depth.

Tasting Notes

  • Appearance: Pale to mid lemon.

  • Aroma: Aromas of nougat, white chocolate, yellow stone fruit, yellow melon, vanilla malt milkshake, and brown pear slices.

  • Palate: Generous with a surprising spine of acidity. Flavours of barley sugar and stone fruit flesh, with a pithy bitter citrus tang and jasmine white flower halo.

  • Finish: A match for pork or chicken schnitzel.
