Region and Vintage Conditions
The King Valley’s elevation and cooler climate allow Sauvignon Blanc to ripen slowly, helping preserve natural acidity and fresh aromatics. The 2023 season was cooler and more challenging than usual, with lower yields but good fruit quality. The slower ripening helped develop flavour without losing freshness, resulting in a clean and well-balanced wine.
Winemaking Techniques
The fruit was harvested at the right time to keep the wine bright and fresh. After gentle pressing, the juice was clarified and fermented in stainless steel tanks at cool temperatures. This approach helps retain varietal aromas and keeps the wine crisp and focused. The wine was kept on fine lees briefly to add a little texture, without softening its freshness.
