Fowles Wine is a family-run estate rooted in the Strathbogie Ranges of Victoria. Their Farm To Table collection aims to mirror their connection to land and food through wines that are bright, generous, and crafted to complement the softer textures of farm-raised meat. 

Vineyards and Vintage Conditions

The 2020 Cabernet Sauvignon draws fruit from their Upton Run vineyard, planted on free-draining granite soils at high elevation. The cool climate of Strathbogie ensures clarity of fruit. Grapes were harvested in early April to maintain freshness and balance ripe flavour with vibrancy. 

Winemaking Process

Fermentation took place in stainless steel to preserve varietal character. A portion was matured in both new and seasoned French oak, while about 7 % Merlot from Billi’s vineyard was added to enrich red-berry flavours and add mid-palate weight. 

Tasting Notes

Dense, dark red with youthful purple hues. The nose offers perfumed blackberry, cassis, liquorice, vanilla, and oak spice. The palate is medium-bodied, rich and smooth with flavours of dark cherry, plum, milk chocolate, and fine soft tannins. 

Food Pairing

Ideal with roast or grilled red meats, hearty stews, venison, or mature semi-hard cheeses. Its structure and plush fruit profile also elevate roasted vegetable dishes or rustic meat pies.
