These conditions allowed Cabernet Sauvignon to fully ripen with depth of flavour, fine tannin structure, and bright natural acidity.

Winemaking
Hand-selected fruit was crushed and fermented on skins for extended maceration to extract colour, tannins, and flavour. Maturation took place in a mix of French and American oak for 12 months, adding complexity, spice, and structure to the generous fruit profile.

Tasting Notes
Deep crimson red in the glass. Aromas of blackcurrant, cassis, and dark plum leap out, supported by cedar, tobacco, and mocha from oak maturation. The palate is full-bodied and structured, with ripe blackberry and black cherry flavours, balanced by fine-grained tannins and hints of spice and chocolate. The finish is long, elegant, and savoury.

Food Pairing
Perfect with slow-cooked lamb shanks, beef short ribs, or a rich mushroom and thyme ragu.

Cellaring Potential
Drinking beautifully now but will reward careful cellaring for 8–10 years.
